  • Heavy Pot
  • Small bowl for lime juice
  • Wooden spoon
  • Strainer
  • Butter or cheese cloth


  • 4 cups organic whole milk
  • 2 tbsps fresh squeezed and strained lime juice


  • Add enough water to pot to cover the bottom. This helps milk from scalding. Add milk and bring to a boil. Reduce heat and add lime juice. stir until curds begin to form. Strain in butter or cheese cloth. Cheese can be eaten at this point or pressed for paneer or other hard cheeses.
    You can add a bit of salt, pepper, turmeric, or your favorite herbs to this recipe.
