Strawberry Basil Jam
Ingredients: 4 cups chopped Strawberries, 2 cups granulated sugar, and 1/2 cup chopped basil.
Method: Place a plate in the freezer, add strawberries and sugar to a saucepan, and cook down on low heat for about 20 minutes. Stir frequently to prevent scorching. After 20 minutes, place a little bit on the plate in the freezer. Test mixture for doneness. If ready, the mixture will gel in the freezer. Let remaining jam in pot cool a little and mix in basil before placing in a jar. This jam must be refrigerated.
